Lobster Corn Chowder

Lobster Corn Chowder

We LOVE Soup, Stews, and Chowders! I can eat them all year around! How about you? I just love how the flavors meld together...and they typically use one pot! My sons and I first discovered Corn Chowder at the "Feast of the Hunter's Moon" in Indiana several years ago when we found a booth serving it. I was totally surprised that the boys liked it...Doc likes it too! So the search began for a recipe...I still continue to make it several times a year.  You may be able to find a couple of Mason Jars full of Cheddar Corn Chowder in our freezer. It's so easy to pull out a jar and send it to work...

Chocolate Chip Mousse in Mason Jars

Chocolate Chip Mousse in Mason Jars

Chocolate Mousse is my favorite dessert!  The first time I tasted chocolate mousse was on my honeymoon...many moons ago.  I don't remember my mom making mousse, her specialty was brownies and grandma typically made cherry pie.  So I never experienced mousse until I was dinning at the hotel restaurant. I especially like mousse when layered with chocolate cake...like the Chocolate Tower Truffle Cake at The Cheesecake Factory!  When I treat myself to this cake I normally get it to go...so I can just eat a few bites of it each day until it's gone.  It is heavenly!!! I've  made chocolate mousse...

Dried-Cherry Chutney

I discovered the recipe for Dried-Cherry Chutney a few years ago...Cooking Light's magazine showed a Port Tenderloin with Dried-Cherry Chutney and Caramelized Onions.  So I cooked all three...it was so good that I continue to make it once or twice a year.  The chutney goes perfect with pork,  ham or beef.  I will be serving the chutney with ham for our family Christmas dinner this year. One year I was ask to prepare a ham for my co-workers.  So I placed the ham in my crockpot and put in the ingredients for the Dried-Cherry Chutney and let all the flavors meld together overnight.  It was so delicious...

Root Beer Float – Summertime Favorite

In celebration of National Root Beer Float...I fixed myself a Root Beer Float! My mom introduced me to my first float at either a Dog 'n Suds or A&W. Then of course I took my sons to get their first Root Beer Float at the Dog 'n Suds in Lafayette, Indiana. We also made them at home. I like my float with Vanilla Bean ice cream.  And here I have IBC root beer.  Also I like Virgils root beer the best. Whole Foods store was out of Virgils my last trip. The ice cream already melted before I took these shots! Enjoyed pouring the root beer to let the foam pour out over the edge of the mug. Do...

Watermelon – Summertime Favorite!

It's National Watermelon Day! I love watermelon and have memories of mom serving it for our summer gatherings out on the patio. We could count on brownies, watermelon and homemade ice cream at our family picnics...along with well-done charred hamburgers. This summer I have been eating a lot of watermelon as I've been bringing home either a container of chunks or a whole one... from every trip to the grocery.  Doc isn't fond of watermelon so I mainly just buy a container of chunks for myself.   Since I wanted to make a salad I brought a whole one home this week. In my search for healthy...

Lobster Roll – Red Hook Lobster Pound Truck in DC

Yummy! I was reading my bon appetit magazine when I came across the readers' favorite restaurant recipes article and saw the request for the Lobster Rolls recipe from the Red Hook Lobster Pound Truck in Washington DC. I immediately had to Google it and found their website redhooklobsterdc.com, twitter account and facebook page. I LOVE LOBSTER. So I saw that they were going to be in Friendship Heights, MD on Wednesday if it wasn't raining. It was going to be a 40 minute drive one way but I knew I wanted to try one. I went to sleep as I waited for the announcement at 8:00 AM Wednesday morning...

Coconut French Toast

I love making French toast for a weekend brunch and this version has coconut, cinnamon and vanilla in the mixture. I discovered this recipe a few years ago in Coastal Living, March 2007 issue. Enjoy!   1 loaf unsliced bread 2 large eggs 1 cup whole milk 1 cup coconut milk 1/2 cup coconut cream 2 tablespoons sugar 1 teaspoon ground cinnamon 1 tablespoon vanilla extract 1 tablespoon butter, divided Powdered sugar, sliced bananas, toasted coconut flakes, and maple...

Great tasting Appetizer – Gladiator Meatballs

Gladiator Meatballs is adapted from one of Emeril's recipes. I make these meatballs a few times a year and occasionally my husband takes them to work in a crockpot. They're always a big hit and the crockpot comes back empty...someone even drinks the gravy.  I make several batches of this recipe to fill my large crockpot. My husband tells everyone that "they will make the back of your eyeballs sweat".  I consider them medium heat.  You can of course make them hot or milder. You can find Emeril's recipe here if you want to make the meatballs yourself -  Garlic Gladiator Meatballs Ingredients 16...
